摘 要: 目的:探求天然抗性淀粉最佳测定方法。方法:通过对抗性淀粉的多种测定方法进行筛选,选出其中3种方法,以抗性淀粉的含量为指标,进行体外实验和比较分析。结果:McCleary法检测到的抗性淀粉含量最高,稳定性最好。结论:测量天然抗性淀粉含量的体外测定方法还需要进一步的体内实验来验证。 Objective: Try to find out the best approach for examination of resistant starch(RS). Methods: Three methods were selected from different methods which fits for the natural RS, and compared results of them. Results: McCleary is the max and the precision is the best. Conclusions: The methods of measuring RS need to be checked by in vivo experiments.
