摘 要: 研究新型防霉剂富马酸二甲酯(DMF)对采后毛叶枣霉变的抑制及果实品质的影响,确定DMF在毛叶枣防腐保鲜方面的效果。实验分析测定了DMF处理后,常温贮藏期间毛叶枣果实的好果率、感病指数及总可溶性固形物、可溶性糖、可滴定酸和维生素C(VC)含量。结果发现,DMF处理果在贮藏20d期间其好果率显著高于对照(未处理果);而果实感病指数显著低于对照(P<0.05);果实的总可溶性固形物含量、糖酸比和VC含量均大于对照。表明DMF在毛叶枣防霉保鲜方面有效,并可延缓果实糖酸比及VC含量的下降,提高果实的商品价值。 To analyze the effects of a new antimould reagent,dimethyl fumarate(DMF),on mould growth and quality of harvested fruit of Zizyphus mauritian Lam.The fresh-keeping function of DMF to this fruit was determined.Experiments were performed to assay the edible rate,the disease index and the contents of total soluble solids,soluble sugars,titratable acidity and VC in fruits stored at ambient temperature.The results showed that,as far DMF treatment fruit,the edible rate was significantly higher,but the disease index was significantly lower(P0.05)than that of control(no treatment)during 20d storage.In addition,the total soluble solid content,sugar/acid ratio and VC content of DMF treatment fruits were higher than that of control.Therefore,DMF treatment was effective in antimould and fresh-keeping on Zizyphus mauritian Lam.fruit.DMF also inhibited the decline of sugar/acid ratio and VC content of this fruit so as to improve its commercial value.
