摘　　要： 食品生产加工技术学习领域课程体系构建可通过"块型"与"条型"的课程组合来完成。"块型"课程是从食品生产过程中抽提出通用的单元操作及典型生产设备操作规程作为"单元操作"类课程设置,"条型"课程是选择在食品产业中占有较大比重或重要影响的产品/原料来构建"生产技术"类课程。 The ＂Block＂ and ＂Linear＂ type course combination can improve the course-construction of food process technology specialty learning area.The universal unit operation and typical equipment routine practice of processing will be defined as ＂Unit Operation Course＂ in ＂Block＂ type course-system,furthermore some important raw materials in food industry will be chosen to be defined as ＂Technology Course＂ in ＂Linear＂ type course-system.
