摘 要: 应用高效液相色谱-电喷雾/四极杆飞行时间串联质谱联用技术分析了紫甘蓝和羽衣甘蓝中的花色苷成分。选用Agilent TC-C18色谱柱(250 mm×4.6 mm×5 mm),二元线性梯度洗脱,柱后流出液采用电喷雾四极杆飞行时间质谱的正、负离子模式进行检测。根据一级质谱的分子离子和二级质谱碎片离子,获得化合物的准确分子量信息,与相关文献报道进行比较,分别从紫甘蓝和羽衣甘蓝中分离并检测到了16种和17种花色苷,且从紫甘蓝和羽衣甘蓝中发现了锦葵-3-(p-香豆酰基)-芸香苷。本方法快速、准确,无需标准品。 The anthocyanins in Brassica Oleracea L. var. capitata L and 13rassica Oleracea var. acephala D. C. were analyzed using HPLC-electrospray ionization/quadrupole-time of flight-mass/ mass spectrometry(HPLC-ESI/Q-TOF MS/MS). The anthocyanins were separated by an Agilent TC-C18 column(250 mm ;4 4. 6 mm × 5 μm) using a binary eluent under gradient conditions. The analytes were detected by ESI/Q-TOF-MS/MS in positive and negative ion mode to obtain MS and MS/MS spectra together with extracted molecular weights. 16 and 17 kinds of anthocyanins were identified from Brassica Oleracea L. vat. capitata L. and Brassica OZeracea var. acephala D. C. by attentive studying on the mass spectra of compounds and comparing with reference data, respectively. Malvidin-3-(p-coumaroyl)-rutinosides was found in Brassica Oleracea L. var. capitata L. and Brassica Oleracea var. acephala D. C. The method developed has the advantages of no reference substance, rapid measurement and accurate determination.
