摄食青草和人工配合饲料的草鱼肌肉营养成分分析及比较

摘  要: 采用常规方法对摄食青草和人工配合饲料的草鱼(青草组和人工配合饲料组)的鱼肉营养成分进行了分析比较并评价了鱼肉品质。结果表明,青草组鱼肉水分、灰分、粗脂肪、粗蛋白含量显著高于人工配合饲料组草鱼鱼肉。青草组和人工配合饲料组鱼肉的游离氨基酸组成基本一致,均含有16种氨基酸,总量分别占鱼肉干样的1.5263%和1.4182%,其中7种EAA(Leu、Ile、Phe、Try、Th r、Val、Lys)、1种HEAA(Arg)和4种NEAA(Glu、Ser、Tyr、Pro)的含量在青草组与人工配合饲料组间存在显著性差异(P<0.05),另外,必需氨基酸指数(EAAI)分别为132.34、36.29,支链氨基酸与芳香族氨基酸的比值(F值)分别为2.52、1.85,4种鲜味氨基酸含量分别占干样的0.3749%、0.1853%;两者之间均存在明显的差异。本研究结果表明青草组草鱼肌肉味道更鲜美,氨基酸组成更为合理。 In this study,to evaluate the fish quality,the nutrition composition of grass carp feeding grass and artificial feed(grass group and artificial feed group) were analyzed.The results showed that the water grass,ash,crude fat,crude protein content of grass group was significantly higher than the artificial feed group;two groups of grass carp had almost the same amino acid composition,and both contain16 amino acids,accounting for 1.4182% and 1.5263% in dry weight respectively.We also found that the content seven kinds of EAA Grass group and the group of fish and artificial feed of free amino acid composition consistent,contain 16 kinds of amino acids,accounting for the total sample of dried fish and 1.4182% 1.5263%,of which 7 EAA(Leu,Ile,Phe,Try,Th r,Val,Lys),the HEAA(Arg) and four kinds of NEAA(Glu,Ser,Tyr,Pro) in the two groups have a significant difference(P0.05).In addition,the essential amino acidsindex(EAAI) were 132.34 and36.29,branched-chain amino acids and aromatic amino acid ratio(F value) were 2.52 and 1.85,four kinds of amino acid were 0.3749% and 0.1853% in dry weight.There were obvious differences.The results show that the grass group carp muscles taste more delicious,amino acids are more reasonable.
