摘　　要： 作为食品质量与安全控制领域的技术之一,电子束辐照技术已经广泛应用于食品的杀菌与保鲜。近年来,利用电子束辐照技术降解食品中兽药残留逐渐成为研究热点。本文对电子束辐照技术的工作原理、特点及其在食品中兽药残留降解方面的应用现状与前景进行综述。 Electron beam irradiation has been widely used in food preservation and sterilization. Recently, the application of electron beam irradiation on degradation of veterinary drugs residues has increased researchers＇ concern.This paper introduced the principle and characteristics of electron beam irradiation, and described the development of its application on degradation of veterinary drugs residues in food.The prospect of its application on ensuring food safety was also discussed.
