摘 要: 阐述核磁共振技术原理,从食品成分分析及水果品质无损检测等方面综述国内外核磁共振技术在食品工业中的应用情况,并展望了该技术在未来食品加工业中的应用前景。 The principle of nuclear magnetic resonance(NMR)was expounded.The applyings of NMR in food industry at home and abroad were mainly discussed here: such as in food components analyzing and intact detection of fruit quality.NMR is an available and effective method because of its high accuracy and good precision and repeatability,so it deserves popularization.
