摘 要: 海产品食源性致病菌已经严重危害人类健康,并阻碍我国海产行业的发展,控制海产品致病菌污染是当务之急。芽孢杆菌抗菌肽作为天然生物制剂的代表之一,克服了传统的物理化学和Nisin抑菌方法的局限性,为海产品食源性致病菌安全控制提供了新的思路。芽孢杆菌抗菌肽具有良好的食品应用特性和产业化能力,显示了应用于海产品食源性致病菌控制的广阔前景。文中对芽胞杆菌抗菌肽控制海产品食源性致病菌危害面临的关键科学问题以及研究策略进行了简要分析。 The foodborne pathogens in seafood are serious harm to human health and impede the development of China's seafood industry. Control of pathogens pollution to marine is a priority. Bacillus antimicrobial peptides as a representative of the natural biological agents overcome the limitations of the traditional physical chemistry and Nisin antimicrobial methods, and provide a new train of thought for seafood safety control of foodborne pathogens. Bacillus antimicrobial peptide properties with good food applications capabilities show broad prospects in the seafood foodborne pathogens control. In this paper, the key scientific issues and research strategies of control of Bacillus peptide against seafood foodborne pathogens are briefly analyzed.
