摘 要: 目前大量西瓜用于鲜食,利用率比较低。文章就西瓜综合利用研究及深加工发展进行分析,主要从西瓜初级产品的加工、西瓜功能成分和副产物的综合利用方面进行综述,并对西瓜深加工发展趋势进行论述。 China is the biggest country of watermelon cultivation and production in the world. At present, watermelon is mainly as fresh food and the utilization rate is low. This paper mainly analyzed the progress of comprehensive utilization and development tendency of deep processing on watermelon. The primary products functional components and by-products of watermelon processing were reviewed and the development tendency of watermelon deep processing was discussed.
