摘 要: 在不同浓度的蔗糖溶液中进行新生磷酸钙沉淀对焦糖、葡萄糖碱性降解物吸附规律的实验研究,结果表明,在不含蔗糖的溶液中,新生磷酸钙沉淀对这些色素的吸附量明显大于含蔗糖的溶液,而且,蔗糖浓度对新生磷酸钙沉淀吸附色素量的影响存在着一个临界区域,当蔗糖浓度高于此区域时,新生磷酸钙沉淀对色素的吸附量基本趋于一致.论文还对不同蔗糖浓度下的吸附规律进行了数学描述,并开展了初步的机理探讨. The adsorption properties of caramel and alkaline degradation product to glucose (ADPG) on the surface of fresh calcium phosphate precipitates (FCPPs) in sucrose solution with different concentrations were experimentally studied. The experimental results indicated that FCPPs in the solution without sucrose adsorb larger magnitudes of caramel and ADPG than it does in the solution with sucrose and there exists a critical zone for sucrose solution concentration. When the sucrose concentration is greater than the critical zone, the extent of adsorption of the colorants on the surface of FCPPs remains nearly unchanged with the increasing of sucrose concentration. The mathematical model was also established to describe the adsorption properties in different sucrose solutions and the mechanism for the adsorption properties was preliminarily discussed.
