摘 要: 根据茅台地区酱香酒生产独特的工艺,分别从高温制曲、高温堆积、高温窖池发酵、高温缓慢馏酒、长期贮存等工序方面,分析了酱香大曲酒生产关键工艺环节与酱香大曲酒风格质量的关系。 On the basis of the unique production techniques of Maotai-flavor liquor in Maotai region,the relations between key production tech-niques of Maotai-flavor Daqu and its quality and styles were analyzed from the aspects including high-temperature starter-making,high-tempera-ture stacking,high-temperature pits fermenation,high-temperature slow liquor distilling,and long-term storeage etc.
