摘　　要： 花生四烯酸(Arachidonic acid.AA)是人和哺乳动物体内一种必需的高度不饱和脂肪酸(highly unsaturated fatty acids,HUFAs)。随着对AA研究的深入,AA及其代谢物在生物体中发挥的重要生理作用被越来越多地认识,使AA成为当前生命科学包括水产学营养研究的热点之一。本文综述了AA的研究进展,特别是生物代谢转化方面的最新研究成果,旨在促进AA的开发、应用和更深入的学术探讨。 Arachidonic acid （AA） is a necessary bighlyunsaturated fatty acids （HUFAs） in human and mammals. With the development of AA research, AA and its metabolites are recognized more and more important in the physiology of organisms and AA is becoming a hot research topic in life sciences, including aquaculture nutrition.. This review focuses on the latest development of AA studies especially its metabolism in order to promote its application and further study.
