摘 要: 对碱性蛋白酶水解红茶花粉工艺进行了研究,确定其最佳水解条件为:在底物蛋白为10%时,加酶量0.06%,酶解时间110min,酶解温度50℃,pH=10.5.此时红茶花粉蛋白的水解度可达65.13%.红茶花粉酶解物具有一定的清除超氧阴离子自由基的能力. The protein of black tea pollen was hydrolyzed by alcalase.The optimum enzymatic hydrolytic conditions were obtained.The results showed that the degree of hydrolysis achieved 65.13%under the optimum condition of substrate concentration 10%,enzyme quantity 0.06%,pH = 10.5,reaction temperature was 50℃and reaction time 110 min.The zymolyte of black tea pollen had some actions of removing the ultra oxygen anion free radical.
