摘 要: 以沙果渣为原料,采用混合菌种发酵法制取沙果渣可溶性膳食纤维。通过单因素试验和响应面分析,研究料液比、接种量、发酵温度、发酵时间对可溶性膳食纤维制取率的影响,并优化了制取工艺参数。结果表明:发酵法制取沙果渣可溶性膳食纤维的最佳工艺条件为料液比1∶23(g∶mL)、接种量12%、发酵温度32℃、发酵时间3d,在此条件下沙果渣可溶性膳食纤维的平均制取率为13.28%。 Using Malusasiatica pomace as the main raw material, the soluble dietary fiber (SDF) was prepared by fermentation with mixed strains. Effects of ratios of material and liquid, inoculum, fermentation temperature and time on yield of SDF were investigated by single factor and response surface analysis experiment, and fermentation conditions were optimized. The results showed that the optimum conditions were as follows: ratio of material to liquid (g/ml) by 1:23, inoculum at 12%, fermentation at 32℃ for 3 d. Under these conditions, the average yield of SDF was 13.28%.
