摘 要: 影响抗菌剂扩散性的因素有很多,食品模拟液是其中一个重要的因素。将1gNisin加入到壳聚糖中制备成抗菌涂层,涂覆于薄膜后分别接触100ml2%的蔗糖溶液、2%NaCl溶液以及水,在25℃下用考马斯亮蓝法测量Nisin的扩散量,通过计算扩散系数来评价在不同食品模拟液中Nisin的扩散性。结果表明,Nisin在2%蔗糖溶液中的扩散系数最大,其次是水和2%氯化钠溶液。 Many factors could impact the diffusibility of antimicrobial agent, lg Nisin was added intochitosan to prepare the antimicrobial coating, and contacted 100 ml 2 %sucrose solution, 2 %NaCl solution and water respectively after coated on film. The diffusive volume of Nisin was measured by Coomassie brilliant blue method and the diffusion coefficient was calculated to evaluate the diffusibility of Nisin in different food stimulants. The result showed that diffusion coefficient of Nisin was the largest in 2 % sucrose solution, followed by water and 2 % NaCl solution.
