摘 要: 叶绿素是存在于绿色植物中的一种独特而重要的营养物质,在果蔬贮藏与加工过程中,如何保护叶绿素是一大难题。本文对叶绿素的性质、叶绿素稳定性的影响因素及果蔬护绿技术等进行了综述。 Chlorophyll is a particular and important nutriment in the green plants.How to protect chlorophyll is a difficult problem during the storage and processing of fruits and vegetables.This paper analyzed the characters of chlorophyll and the factors which affect the stability of the chlorophyll.A review of preserving green technologies of fruits and vegetables was given.
