摘 要: 《食品工艺学实验》是食品科学与工程专业重要的实践课程,文章研究的内容是让学生选择试验内容、设计试验方案、评价试验结果,教师全程指导与跟踪,这种教学方法充分提高了学生的学习兴趣,培养了学生的思考能力,3年的教学结果表明这种教学方法是有成效的。 Food Technology Experiment is an important practice course of food science and engineering specialty. Choosing experimental items, designing the experimental scheme, evaluating the experimental results by student themselves were studied in the investigation. The teachers instructed the whole process during the experiment. It showed the teaching way was effective in the recent three years, which can promote the students interesting and thinking ability.
