摘 要: 对我国传统乳制品概况、乳酸菌概况、我国传统乳制品中乳酸菌多样性分布和具有优良特性乳酸菌的筛选研究以及我国传统乳制品中乳酸菌保健功能研究等研究进展进行了综述。 Overview of China's traditional dairy products, lactic acid bacteria profile and the advance in research on diversity distribution of lactic acid bacteria in Chinese traditional dairy products, the screening of lactic acid bacteria with excellent properties and their health function are reviewed.
