摘 要: 香精香料在食品生产中起着重要的作用,近年来人们由于健康的增强更倾向于使用天然产品,对天然香料的需求也大大增加了。由于合成香料与天然香料的价格相差较大,这使得寻找其他生产天然香味物质的方法成为必须。本文综述了酶工程、微生物工程、细胞工程、基因工程、发酵工程等在天然香精香料开发中的研究与应用进展。 Flavors and fragrances are important in the production of food. Nowadays, utilization of natural flavors is of great importance because people prefer to natural compounds due to the healthy reasons. On the other hand, the big difference in price between natural flavors and the chemical flavors promoted the production of flavors by biotechnology. Research and application of enzyme engineering, microbial engineering, cell engineering, genetic engineering and fermentation engineering in production of natural flavors and fragrances were summarized in this paper.
