摘　　要： 用0.2 mol/L的NaOH水溶液于80℃提取甘草的有效成分,对甘草美白润肤乳生产工艺中的不同乳化时间、乳化温度以及搅拌速度等条件进行优化,用正交实验优化单硬脂酸甘油酯、Span-80和Tween-80三种乳化剂的最优配比。结果表明,甘草美白润肤乳的最佳生产工艺条件为:乳化时间50 min,乳化温度85℃和搅拌速度300 r/min;3种乳化剂配比单硬脂酸甘油酯∶Span-80∶Tween-80的摩尔比为1∶1∶1.7。本研究配制的甘草美白乳的理化指标、感官指标、卫生指标中细菌总数等均符合国家标准。 The different emulsifying time, emulsifying temperature and stirring speed conditions were optimized. Three emulsifier optimal proportion of monostearin, Span-80, and Tween-80 was studied by using orthogonal experiment. The results showed that the optimum emulsifying conditions were emulsifying time 50 min, emulsifying temperature 85℃, and stirring speed 300 r/min ; the ratio of monostearin, Span-80, and Tween-80 were 1 ： 1 ： 1.7. The physicochemical index, sensory index, and the health index of the whitening cream of glycyrrhiza were accord with the national standard.
