摘 要: 食品工程原理是一门实践性、工程性很强的课程,在教学实践中应该注重培养学生的工程思维和工程意识,提高分析问题、解决问题的能力。本文通过探讨在食品工程原理中如何精选授课内容、重视实验教学、强化课程设计、结合生产实际等四个方面,阐述了如何在该课程教学中培养和强化学生的工程素质。 Principle of Food Engineering is an application course with the focuses of practicality and engineering. It is therefore so significant for teachers to cultivate students' engineering viewpoint and ability of analyzing or solving engineering questions. The paper give a primary discuss on how to choose the contents of giving lessons carefully, pay attention to experiment teaching and course design, combine produces practice, etc., have explained what engineering quality that training and strengthen in this course teaching.
