摘 要: 对国内在大豆品种的加工适用性及优质品种培育等方面的研究工作予以全面回顾,介绍了几种常见大豆制品(大豆油、大豆分离蛋白、豆奶、豆腐、菜豆等)对原料品种的理化、营养等品质要求,希望能为大豆育种及加工业者提供参考。 In this paper, the research advances on the processing applicability of the related domestic soybean varieties and the cultivate status of the high quality varieties were summarized. We also briefly introduced the requirements of several common soybean products (soybean oil, soybean separation protein, soy milk, bean curd, kidney bean, ect) to the physical, chemical and nutritional quality of soybean varieties, so as to provide a reference for soybean breeding and processing.
