摘 要: 综述了米糠蛋白提取工艺,功能特性及其活性肽在降血压(ACE抑制肽),阿片样拮抗活性,抗氧化,免疫调节等方面的作用,并且概括了米糠蛋白及肽在食品行业的应用。 An introduction about the extraction technology and functional characteristics of rice bran protein and the biological activity of rice bran peptides, such as antihypertensive peptides (ACEIP), anti - opioid peptides, antioxidant peptides and immunoregulation polypeptide, are covered in this paper. Thus the application of rice bran protein and peptides in food industry is generalized.
