南海黄弘香鸡肌肉氨基酸、脂肪酸含量比较研究

摘  要: 对15周龄南海黄弘香鸡A、B系和江西土鸡的肌肉氨基酸含量及脂肪酸组成进行了测定。结果表明:①氨基酸总量在所测定的3个品种间存在一定的差异。②在必需氨基酸含量测定中,弘香鸡A、B系比较接近,江西土鸡则较低。③弘香鸡A系、B系的谷氨酸含量均比对照组高。④弘香鸡A、B系和江西土鸡饱和脂肪酸构成比例大致相似,都以油酸的含量最高。不饱和脂肪酸含量大大高于饱和脂肪酸所占比例。⑤必需脂肪酸在三个品种之间存在较大差异,以弘香鸡B系最高,其次是弘香鸡A系,江西土鸡最少。 The content of amino acid in the meat and the composition of fatty acid of Nanhai Hongxiang chicken A and B strain, Jiangxi local chicken had been determined. (1)There were some differences in the total amino acid of the testing varieties. Among of the total amino acid,Nanhai Hongxiang chicken A strain was the highesL (2)In the determination of essential amino acid content,Nanhai Hongxiang chicken A and B strain were very close,which were higher than the rate of Jiangxi local chicken.(3)The glutamic amino acid content of Nanhai Hongxiang chicken A strain and B strain were much higher than Jiangxi local chicken. (4)The structural proportion above three varieties were much similar,the content of oleic acid was the highest saturated fatty acid in those three varieties. (5)There were many differences in the essential fatty acid of the testing varieties. That of Nanhai Hongxiang chicken A and B strain was much higher than the rate of Jiangxi local chicken.
