摘 要: 通过黏度法和质量法等对银合欢种子胶的流变学性质和物理性能进行了研究。研究结果表明,猪屎豆种子胚乳占种子质量的19.30%,胶溶液pH6.15,胶粉中总糖含量22.52%,胶的交联性能良好。银合欢种子胶溶液的黏度随浓度、加热温度升高而升高;溶液为"非牛顿流体",当浓度大于0.3%时,溶液为"假塑性流体";加热时间、pH及苯甲酸钠对其黏度影响较小;冷藏、冷冻均使其黏度有所增加;超声波处理对其黏度有一定影响;溶液具有良好的耐盐稳定性和抗降解性能;银合欢种子胶与卡拉胶、魔芋胶、黄原胶均无协效性。 The rheological property and the physical function of ipilipil seed gum were studied from measuring viscosity and weight,et al. The results showed: the endosperm accounts for 33.03% in the seed weight, pH of the 0.5% gum solution was 5.96, total sugar of gum powder accounts for 48.0345%; the crossing linking performance was good. The viscosity of ipilipil seed gum solution was raised with the rising of concentration and temperature, the solution was a “non-Newton” fluid. When its concentration was 0.3%, the solution was “pseudoplastic fluid”. The effect of heating length, pH and benzoate was small. The viscosity raised a little with the freeing-thawing change, and ultrasonic wave treating had some effect on the viscosity of ipilipil seed gum. The solution had good sodium stableness and can resist to degradability well. It had no synergism with Kara gum, Konjak gum and Xanthan.
