摘 要: 研究了不同组成的壳聚糖涂膜保鲜剂对杨桃的保鲜效果。结果表明:壳聚糖涂膜剂对杨桃具有较好的保鲜效果,浸涂保鲜剂的杨桃在贮藏期间其水分、总酸和维生素C的含量均高于对照,而还原糖含量低于对照。壳聚糖涂膜保鲜剂较适宜的配方为:壳聚糖2.5%,乙酸1.5%,甘油1.0%,单硬脂酸甘油酯0.3%,水94.7%。 Different formulation of chitosan film preservative on carambola fresh keeping was studied. The results chitosan had good preserving effect on carambola. Water, total acid and vitamin C concentration of the carambola preservative were higher than that of comparison, and reducing sugar was lower. The feasible composition of chitosan film was 2.5 % of chitosan, 1.5 % of acetic acid, 1.0 % of glycerin, 0.3 % of glycerol monostearate and 94.7 % of water. showed that filmed with preservative
