摘　　要： 植酸酶是催化植酸及植酸盐水解成肌醇和磷酸的一类酶的总称。植酸酶在单胃动物中的推广和应用往往受到其酶性质的局限。本文综述了植酸酶的来源、基因工程和蛋白质工程合成植酸酶的研究进展。 Phytases are enzymes capable of hydrolyzing phytic acid（or phytate） into inositol and phosphoric acid.The application of natural phytase in monogastric animals is limited due to its disadvantages.The article summarized the source of phytase,the gene engineering and the protein engineering of phytase synthesis.
