摘 要: 本文研究了从野生油茶叶中提取天然抗氧化剂的工艺,确定了其最佳的工艺条件;以POV法测定了野生油茶提取物在猪油中的抗氧化效果,进行了增效试验和应用试验;并对该抗氧化剂主要成分的结构进行了初步鉴定. In this paper,the extracting process of the natural antioxidants from wild Camellia Oleifera Abel are studied.Its optimum conditions are found out.The antioxidant effect of COAE in Lard is measured with peroxide value determination.The additive test and its application are studied.The structure type of the antioxidant main componets is also identified.
