摘 要: 分析了中国毛虾的一般营养成分、蛋白质的氨基酸组成、无机质及维生素等的含量并进行了营养学评价。结果表明,其蛋白质含量高达72.9%(干基),氨基酸组成中,Gu、Asp、Gly、Ala、Lys、Arg等含量丰富,氨基酸价达83。此外还富含钾、钙、镁、铁、磷、硒等无机元素及维生素B_5和维生素E。 Proximate nutrients, protein amino acids composition,minerals and vitamins of Acetes Chinensis were studied in this paper. In the meantime an analysis of them from the angle of nutrition was made. The results demonstrate that the protein content of the shrimp is high as being up to72.9% (dry basis) ,its amino acids score is as high as 83. Some tasty and functional amino acids, Glu, Asp, Gly, Ala, Lys and Arg have their high contents in the amino acids composition of protein of the shrimp. It is also rich in K,Ca,Mg,Fe,P and Se, Vitamin B5 and Vitamin E as well.
