摘　　要： 对中性蛋白酶和胰蛋白酶样品进行了以明胶为底物的酶解反应试验,并对两种酶的水解能力进行了比较,确定了两种酶的反应温度、pH值、底物浓度、加酶量以及酶解时间等条件. Gelatin hydrolysis by samples of neutral protease and trysin had experimented, ability of two kinds of protease have analyzed. The hydrolyzing conditions of two kinds of protease was determined, such as tempera-ture of reaction, pH value、substrate concentration、amount of protease and time of hydrolysis.
