摘 要: 用常规的生化分析方法对新丰江水库肌肉成分和氨基酸含量进行测定,结果表明,肌肉中水分含量占76.87%、粗蛋白占18.50%、粗脂肪占2.40%、粗灰分占1.30%;肌肉中氨基酸含量为13.80%,其中必需氨基酸含量为6.34%,鲜味氨基酸含量为4.98%。 The conventional methods of biochemical analysis on the composition and amino acid contents of the muscle of Hemicutler leucisculus from Xinfengjiang reservoir was adopted. The results showed that the water contents in muscle accounted for 76.87%, and there is 18.50% crude protein, 2.40% crude fat and 1.30% ash in muscle. The total amino acid content of fresh sample was 13.80%, and content of essential amino acids and flavoring amino acids was 6.34%, 4.98%, respectively.
