摘 要: 探讨了以香蕉茎干为原料,用超声波提取水溶性膳食纤维的工艺及其操作条件,并与直接水提法进行比较。结果表明,超声波法最佳工艺条件为:提取时间20min、提取功率600W、液料比为3mL/g、pH为4;SDF干基产率达到9.90%;超声波法工艺明显优于直接水提法。 Soluble dietary fiber extracted from banana pseudo stem by ultrasonic wave and by hot water was studied. The optimal conditions were obtained by a series of mono-facter experiment and L9 (3^4) orthogonal test. The experiments showed that the optimal conditions were using buffer agent pH4, distill time 20min, ultrasonic wave power 600W,ratio of liquid-solid 3mL/g.The dry-yield of soluble dietary fiber reached 9.90%.The extraction ratio by ultrasonic wave was prior to by hot water.
