摘　　要： 在简要介绍冷却肉的基础上、详细地综述了冷却肉保鲜技术以及冷却肉的包装技术,这对认识冷却肉及其加工技术有一定的参考价值。 This article overviewed the preservative technology and package technology of chilled meat in detail on the basis of brief introducation of chilled meat, which has reference for recognition in chilled meat and its produced technology.
