摘 要: 富硒食用菌是一类有价值的药用/功能性食品。从食用菌的富硒特性、富硒食用菌的营养成分、药理作用及生产技术等方面进行了总结。 Selenium-enriched ( SE ) edible fungi were valuable officinal/functional foods. SE characters of edible, nutritional composition, pharmacological activities, and the production techniques of SE edible fungi were summarized in this article.
