摘 要: 蔬菜是喜氮作物,在一定范围内施用氮肥可明显提高蔬菜的产量,可是盲目施用氮肥的直接后果就是导致环境的污染和蔬菜硝酸盐含量的超标,严重威胁消费者的身体健康。该文分析了我国蔬菜硝酸盐污染的现状、蔬菜硝酸盐累积的内外因素、硝酸盐食用卫生评价,并提出了控制蔬菜硝酸盐污染的途径。 The vegetables are the nitro-philo crops. It increases the yield of vegetables to apply the nitrogen in the certain scope. It will be harmful to people's health to blindly apply the nitrogenous fertilizer and which will directly result the environment pollution and exceed the standard of the content of nitrate in vegetables. The article puts forward the way of controlling the nitrate pollution in vegetable by analyzing the present situation of nitrate pollution, the internal and external cause of nitrate accumulation in vegetables and the hygienic assessment of edible.
