摘 要: 以番石榴为材料,比较华南地区5个主要品种番石榴的总抗氧化能力(TAC)、自由基清除能力(DPPH·)以及黄酮含量的差异,并对不同品种番石榴的抗氧化作用与黄酮含量的相关性进行了分析。结果表明,不同品种番石榴的抗氧化作用差异较明显,清除自由基能力最强的是台湾新世纪,胭脂红次之,早熟白最差;总抗氧化能力及黄酮含量表现为:胭脂红>台湾新世纪>芭乐>珍珠>早熟白,且番石榴的总抗氧化能力与黄酮含量之间具有显著的相关性(P<0.05)。 The difference of the total antioxidant capability (TAC), the capability of scavenging free radical and the content of flavonoid of different varieties of guava from South China were studied in this paper,and the correlation between the total antioxidation capability and the flavone content was also analyzed. The result showed that the capability of scavenging free radical of Taiwan New Century variety is strongest, Yanzhihong variety is better and the Zaoshubai variety is worst. The TAC and the content of flavone can be summarized as follow: Yanzhihong variety 〉 Taiwan New Century variety 〉 Bale variety 〉 Zhenzhu variety 〉 Zaoshubai variety. And there was significant (P〈0.05) correlations between the TAC and the content of flavone.
