摘 要: 在酒店与高职餐饮管理专业教学工学结合实践中,专业课程教学还存在教学内容与工作内容脱节、教学方法不适应、课程考核方式单一和“双师型”师资欠缺等问题。为此,提出教学内容与“三个流程”相结合,提高学生和企业参与度,推行形成性考核和综合项目考核,建立“双师型”师资队伍培养长效机制等建议。 In the practice of combing learning with working of hotel and restaurant management specialty, there still exist some issues in specialty curriculum teaching, such as that teaching content disjoint from working content, teaching methods are not suited, the singleness of curriculum assessment mode and lack of 'dual-qualification' teachers. To this end, the essay put forward the following suggestions: teaching content combining with 'three processes', improving the participation of students and enterprises, implementing formative assessment and comprehensive project evaluation and establishing the long-term mechanism for training 'dual-qualification' teachers, and so on.
