摘 要: [目的]寻求褐菇多糖提取的最佳工艺条件。[方法]以新鲜褐菇子实体为材料,采用热水浸提法,探讨提取时间、提取温度、料水比以及提取次数等因素对多糖提取率的影响。[结果]通过正交试验得到提取褐菇多糖的最佳工艺条件为料水比1∶30、时间2.5 h、提取2次、温度90℃。[结论]该研究为褐菇多糖的开发利用提供了理论依据。 The aim of the research was to seek out the optimum technology conditions for extracting polysaccharide from Portabella. [Method] With the fruiting body of fresh Portabella as materials, the effects of the factors such as extraction time, extraction temperature, the materialwater ratio and extraction times on the extraction rate of polysaccharide were studied by using hot-water extraction method. [Result] Through the orthogonal test, the optimum technology conditions for extracting polysaccharide from Portabella were obtained as follows: the materlal-water ratio of 1:30, extracting for 2.5 h at 90 ℃ and extracting twice, [Conclusion] The research provided theoretical basis for the development and utilization of Portabella.
