摘 要: 阐述了茶叶加工过程γ-氨基丁酸的富集机理与鲜茶叶富集γ-氨基丁酸的关键技术,着重介绍了厌氧处理技术与茶树品种选育技术。 In this paper, the enrichment mechanism of Gamma-aminobutyric Acid (GABA) in Tea Shoots and the influential factors were reviewed. The key enrichment technologies of GABA enrichment in tea materials, especially the anaerobic treatment and breeding of the tea varieties, were also sunlmarized.
