摘　　要： 对几种中低温加工技术的原理、特点及其在食品工业中的应用现状和发展前景进行简介。以期为改善食品加工工艺和设备提供有益的参考。 The mechanism and characteristics of medium and low temperature-heated processing technology were summarized in this thesis, the application on food industry was analyzed. The prospect of application was also mentioned in the thesis.
