摘 要: 分析和总结了在食品科学与工程专业本科生中开设“食品工艺综合性实验”课程的必要性以及对课程体系、教学模式、教学内容进行的改革和取得的效果。实施效果表明,开设“食品工艺综合性实验”得到了学生的普遍认同,认为通过综合性实验扩大了知识面,对食品工艺知识有了直观的感性认识,巩固了理论课学习的基本知识,提高了综合实验的技能和动手能力,培养了学生的学习兴趣、团队精神、创新精神以及分析问题和解决问题的能力。 The importance of reform on food processing integrative experiment, reform contents including course system, teaching model and experimental content and effect were analyzed. The results showed that students approved of food processing integrative experiment, by which, the students' knowledge was extended, the knowledge learned in class and book was understood and consolidated, the experimental skill and ability were improved and the interest of learning, team work spirit, creative spirit, and ability of analysis and resolving question were cultivated.
