摘　　要： 综述了近年来红曲及其活性物质在食品、药品等方面的应用研究状况,及其工业化生产现况,并阐述了桔霉素问题目前的研究进展,最后对红曲的研发方向提出了几点建议。 This paper introduces research advance of red kojic rice and the application of its bioactive substances in food and medicine. The identification methods of the main bioactive substance, Monacolin K, and its present industry production were also Furthermore, the recent research progress of citrinin and the prospect of development of red kojic rice were forecasted.
