摘 要: 在简要介绍速冻水饺生产技术的基础上,对速冻水饺行业的现状以及生产销售过程中存在的问题进行了深入的剖析,重点探讨了国内外研究进展,并阐述了今后速冻水饺行业发展应注意把握的问题。研究成果对指导行业和企业的健康良性发展具有十分重要的现实意义。 Quick-frozen dumpling inherits and carries forward our traditional savory - - dumpling. On the basis of skeletal introduction to the technique of quick - frozen dumpling production, this paper analyses the status quo of quick frozen dumpling trades and the existed problems deeply, probes into the home and abroad research progress emphatically and expounds remarkable problems during the development of quick - frozen dumpling trades. Research achievements are of realistic significance to the healthy and benign development of the trades and enterprises.
