摘 要: 我国酱油渣产量很大,但目前对它的开发利用还进行得不多,主要用作饲料或肥料,甚至当作垃圾进行处理,资源浪费严重。随着竞争的加剧以及环保意识的加强,从酱油渣中提取油脂、膳食纤维、磷脂、黄酮等将引起人们更多的关注。 The amount of soy sauce residue is very high in China. Hower, being lack of research, it is used as feedstuff or fertilizer, even as garbage. It will catch much attention to extract oil, dietary fibre, phosphatide and flavonoids from the material with the intensification of competition and the enhancement of environment protection consciousness.
