摘 要: 综述了国际上关于果汁含量检测和果汁鉴别技术的研究进展,主要包括针对加水、加糖(或糖浆)、加酸、加果渣提取液、加价格便宜的其他果汁等果汁掺假手段的检测,为开发适合我国国情的相关技术提供参考。 The detection techniques of juice adulteration were reviewed. Methods were developed mainly for detecting the additional water, sugar (or syrup), acids, pulpwash, cheaper juices in adulterating juice. The techniques introduced in the paper could be excellent references for establishing juice standards and detecting of juice authentication in China.
