摘 要: 随着社会的进步与发展及人民生活水平的提高,大豆及其制品越来越受人们喜爱,我国是大豆的故乡,是最早进行大豆加工利用的国家。然而,目前,我国在大豆加工利用方面的整体水平与国际先进水平相比还有不小的差距。通过对国内外大豆传统加工利用及现代加工利用的比较研究,分析了我国大豆加工的发展方向。 With the development of society and the enhancement of living standard, soybean and bean - products are more and more popular. China is the hometown of soybean, and China has the longest history in soybean processing and utilization. However, nowadays, soybean processing production is still backward in our country. After comparing the production and utilization of soybean between China and abroad, the development direction of soybean processing is discussed.
