摘 要: 比较了5种乳酸菌计数培养基对乳酸菌的检测效果,其中TJA培养基乳酸菌检测率比LCM培养基、MRS培养基、改良CHALMERS部养基和LAB培养基分别高11.7%、44.8%、43.1%、和121.3%;在优选出的TJA培养基上分别添加不同质量分数的分散剂吐温-80进行改良,结果表明,改良TJA培养基以含0.1%吐温-80的检测效果最佳,对部分市售酸乳的检测与分析表明,酸乳成品中的乳酸菌数普遍大于1×108cfu/ML,个别品牌酸乳中的活性菌达到1×109cfu/ML. The detection effects of five counting mediums of lactic acid bacteria were compared, and TJA counting medium was optimized as the best. As an improvement, different concentrations of Tween-80 were added into TJA counting mediums. The results showed that detection rate of TJA counting mediums was 11.7%, 44.8%, 43.1% and 121.3% higher separately than lactic acid bacteria counting medium, MRS medium, modified CHALMERS medium and LAB medium. Detection effect of TJA medium with 0.1% Tween-80 was the best. After the detection and analysis of some yoghurts on the market, it was found that the lactic acid bacteria amounts in yoghurt products were usually more than 1×10^8cfu/mL, and in yoghurts of some brand the active bacterium number was even up to 1×10^9 cfu/mL.
