摘 要: 差示热扫描量热分析(DSC)结果表明,β-环状糊精/胆固醇包合反应中最佳分子摩尔比约为3:1。基于此,初步探讨了应用该法脱除鲜奶和黄油体系胆固醇的工艺流程。 The data from Differential Scanning Calorimetry(DSC) showed that the optimum ratio of Pcyclodextrin to cholesterol was three to get the best inclusion of cholesterol.The method of cholesterolremoval from milk and butter by β-cyclodextrin inclusion was studied.
