摘 要: 苦味抑制剂是一类能降低或消除苦味物质苦味的化合物。目前已发现多种天然的苦味抑制剂,如苯乙烯酸衍生物、单磷酸腺苷、磷脂酸等。简要论述了天然苦味抑制剂的种类、效果及其应用。 Bitterness inhibitors are such compounds that can decrease or eliminate bitterness of bitter substances. Nowadays several kinds of natural bitterness inhibitors have been discovered ineluding certain cinnamic acid derivatives, adenosine monophosphate, phosphatidic acid, etc. This paper briefly summarizes the category, effects and applications of them.
