摘 要: Lactobacillus rhamnosus6013在MRS培养基中于37°C厌氧培养48h生长最好,所得的培养上清液对金黄色葡萄球菌、枯草杆菌、沙门氏菌有很好的抑菌作用。分泌到培养基中的抑菌物质部分地受到1mol/L氢氧化钠溶液,胰蛋白酶和胃蛋白酶的影响,表明综合的抑菌作用可能是乳酸和蛋白质类物质的协同作用的结果。使用HPLC分析,抑制致病菌的主要物质是乳酸,质量浓度为4.38g/100mL。另外,培养上清液与NaCl溶液,乙醇溶液,Nisin溶液协同作用后,对金黄色葡萄球菌有协同增效的抑菌作用。 Lactobacillus rhamnosus 6013 was grown best anaerobicly at 37 ℃ for 48 h in MRS broth. The culture supematants at this kind of condition had excellent inhibitory effect on Staphylococcus aureus, Bacillus cereus and Salmonella typhimurium. The antimcirobial substances secreted into the spent media were partially affected by treatments with 1 mol/L NaOH, trypsin and Pepsin suggesting that overall inhibition may be due to a synergistic action of lactic acid and proteinaceous substances. By means of HPLC, the main substance to inhibit pathogen was lactic acid whose content was 4.38 g/100 mL. Otherwise, NaCl soltution, ethanol solution, Nisin solution and the supernatants had a synergistic inhibitory effect on Staphylococcus aureus.
